Hi, i've a sunray 800hdse, thinking about upgrading with Japhars sim...if i buy it now does the sim come with OS v6 new firmware or i will need to upgrade it bymyself?

Yes, the Sim comes now since the release of the v6 in April, all programmed with v6 OS.

You can then yourself if you want change the OS inside to older version (but I don't think it's useful ;o), or flash another v6 OS for another box if you want to swap the sim to another DM box like for example DM8000HD, DM900UHD, DM520HD, etc.
